Walk in on a Saturday morning and Dnisi is already full. The roasting equipment sits in clear view and sets expectations before anything has been ordered.
The flat white reviewed was an Ethiopian guest roast. Initial sweetness followed by a lovely sour edge that builds with every sip, the milk integrating well with a slight frothy head that doesn't quite vanish. The balance between the espresso's gentle acidity and the sweetness of the milk is one of the more distinctive combinations on the index. Temperature is spot on.
